Equipment Standards—General Requirements: Enough equipment for cooking, heating and hot holding shall be provided. Equipment should be sufficient in number and capacity to meet the needs of the establishment. The Sanitarian/Plan Reviewer doing the opening inspection will follow up to ensure that equipment meets applicable standards 2. Food Contact Surfaces: Primary food contact surfaces (counters) shall be of solid surface construction. Plastic laminate surfaces are not acceptable for food contact and food preparation surfaces. All service cabinets shall be protected with plastic laminate or equivalent to Standard No. 35 covering all exposed surfaces. Exposed wood surfaces on cabinets and under counter tops shall be covered to provide a smooth and easily cleanable surface. Cutouts in millwork shall be sealed with plastic laminate. Ventilation System: Kenmore Elite domestic range hood approved for use by city of Prior Lake Building Official and State Fire Marshall. Adequacy of ventilation will be monitored during routine inspections. If found to not effectively remove excessive heat, steam, odor or grease replacement exhaust ventilation will be required. 6. Three-Compartment Sink: A three-compartment sink with dual integral drain boards will be provided. Sink bowls shall be adequately sized for the largest utensil to be washed in the three- compartment sink. Approved racks, shelves or dish tables for storing soiled equipment and utensils and air drying clean equipment and utensils will be provided. 7. Undercounter Dishmachine : Kenmore Elite (NSF Sanitize Cycle) * ability of dishwasher to meet food code requirements will be evaluated durine routine inspections. 8. Hand Sink: Hand sink will be provided in the following areas: kitchen Each handwashing sink shall be provided with hot and cold water through a mixing valve or combination faucet. 9. Walls: Wall surfaces in splash zones or high moisture areas such as warewashing, food preparation sinks, handsinks and janitorial sink areas shall be finished with smooth, light colored, durable, non-absorbent materials. Block walls shall be finished with an epoxy or enamel paint equivalent to an orange peel finish. Floors: Floors in kitchens, bars, other rooms where food is stored, prepared or washed, employee dressing or locker rooms, toilet rooms and janitorial rooms shall be smooth, non-absorbent, durable and easily cleanable. 11. Ceilings: Ceilings in kitchens, bars and bar service areas, other rooms where food is stored, prepared, or washed, toilet rooms and janitorial rooms shall be smooth, non-absorbent, durable and easy to clean. 12. Lighting: Food preparation areas in which food or beverages are prepared, utensils are washed shall provide a minimum of 50 foot-candles of shielded light measured 30 inches above the floor. Food and utensil storage rooms,toilets, locker rooms, dressing rooms shall be provided with at least 30 foot candles of shielded light measured at 30 inches above the floor. 13. Plumbing: A plumbing plan approval letter has not been received at this time. Provide at opening inspection evidence that the plumbing system has been inspected and approval given by the local building official or a representative from the Department of Labor and Industry (DOLI). All plumbing plans shall be approved by the Minnesota Department of Labor and Industry (DOLI) or delegated agent. Chemical or detergent dispensers must be installed to Minnesota Plumbing Code Chapter 4715 and have appropriate backflow prevention devices. A separate on-site inspection will be conducted by the Minnesota Department of Labor and Industry plumbing inspector or delegated agent to determine compliance with the Minnesota Plumbing Code. All plumbing equipment shall be installed in accordance with the Minnesota Plumbing Code for a commercial establishment. Utility lines must not be placed on the floor and must be installed at least 6" off the floor. Provide vacuum breakers at all threaded hose bibs. No wye adapters. Every room occupied for sleeping purposes by one person shall contain at least 70 square feet of usable floor space, and every room occupied for sleeping purposes for more than one person shall contain not less than 60 square feet of usable floor space for each occupant thereof. Under no circumstances shall there be less than 400 cubic feet of air space per occupant. Usable floor space excludes closets and bathroom areas. All rooms proposed single occupancy. Number of rooms provided: 6 Square footage of each room: 9 X 12 108 ft2 2. No sleeping quarters shall be provided in any basement having more than half its floor to ceiling height below grade. 3. No sleeping quarters shall be maintained in rooms which do not have unobstructed egress to the outside or to a central hall leading to a fire escape. 4. Suitable fire escapes shall be provided. They must be kept in good repair and accessible at all times. 5. Hallways must be marked and exit lights provided. 6. Fire extinguishers shall be provided as required by the State Fire Marshall. 7. All structures shall be smooth, easily cleaned, shall be kept clean and in good repair. Abrasive strips for safety purposes may be used to prevent accidents. 8. All floors shall be constructed as to be easily cleaned and shall be smooth. 9. Wall and ceiling may not be studs,joists, or rafters unless suitably finished and kept clean. 10. All sleeping places provided for guests shall be supplied with suitable pillow slips and under and top sheets. 12. All outside doors, windows and other openings shall be screened when flies, mosquitoes, and other insects are prevalent. 13. Every lodging facility shall be constructed and equipped as to prevent the entrance of pests. 14. The temperature of hot water which is provided in any public area or guest room, including but not limited to sinks, bathtubs or showers, shall not exceed 130° F. 15. Toilet facilities shall be available on each floor when not provided in each individual room/unit. Toilet, sink, and bath facilities shall be provided in the ratio of one sink and toilet for every ten occupants, or fraction thereof, and one bathtub or shower for every 20 occupants or fraction thereof. (2)Bathrooms Provided—(2) toilets, (2) sinks each (1) Shower Provided 16. All sinks for public use or furnished in guest rooms shall be supplied with hot and cold running water and soap. Approved sanitary towels or warm air devices shall be provided for hand drying. 17. All rooms and bathrooms shall be shall be well lighted and ventilated either by mechanical or natural means. 18. The doors to all toilet rooms serving the public and employee shall be self-closing. 19. Handwashing signs shall be posted in each toilet room used by employees. 20. A safe adequate supply of water shall be provided and shall be located, constructed, and operated in accordance with rules governing water supplies. 21. All garbage and refuse shall be kept in watertight, nonabsorbent receptacles which are covered with close-fitting, fly-tight lids. 22.
